1 (3 to 4-pound) whole chicken

2 cups buttermilk

1 teaspoon cayenne pepper
1 tablespoon onion powder

INSTRUCTIONS
1. Cut the chicken into 10 pieces. Place in a large bowl and season with 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Add 2 cups buttermilk and marinate in the refrigerator for at least 1 hour. Meanwhile, whisk together remaining 1 tablespoon kosher salt, remaining 1/2 teaspoon black pepper, 2 cups all-purpose flour, 1 tablespoon garlic powder, 2 tablespoons cayenne pepper, 1 teaspoon cayenne pepper, 1 tablespoon onion powder and 1 tablespoon crushed mustard in a large bowl.

2. Preheat Toshiba air fryer to 390°F and coat air fryer rack with cooking spray. Remove the chicken from the buttermilk and let the excess drip off. Pour in the flour mixture and shake off any excess. Place a layer of chicken in the basket, leaving spaces in between. Air fry, turning the chicken aisle, until the chicken is crisp and a thermometer registers 165°F for the thickest piece, 18 to 20 minutes total. Repeat for the remaining chicken.
